{"id":103,"date":"2009-04-27T18:01:46","date_gmt":"2009-04-27T08:01:46","guid":{"rendered":"http:\/\/brigidtreloar.com.au\/blog\/2009\/04\/27\/green-tomatoes\/"},"modified":"2021-02-08T23:04:06","modified_gmt":"2021-02-08T13:04:06","slug":"green-tomatoes","status":"publish","type":"post","link":"https:\/\/brigidtreloar.com.au\/blog\/2009\/04\/27\/green-tomatoes\/","title":{"rendered":"Green Tomatoes"},"content":{"rendered":"<p id=\"top\" \/>\n<h2><strong><span style=\"color: #ff0000;\">On ABC NSW radio\u00a0<\/span><\/strong><\/h2>\n<div id=\"attachment_228\" style=\"width: 160px\" class=\"wp-caption alignleft\"><img decoding=\"async\" aria-describedby=\"caption-attachment-228\" class=\"size-thumbnail wp-image-228\" title=\"Bruschetta\" src=\"http:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2009\/04\/rimg0271-150x150.jpg\" alt=\"Bruschetta - tomato, fresh goats cheese, basil &amp; cracked black pepper\" width=\"150\" height=\"150\" \/><p id=\"caption-attachment-228\" class=\"wp-caption-text\">Bruschetta &#8211; tomato, fresh goats cheese, basil, black pepper<\/p><\/div>\n<h3>Growing your own tomatoes is very easy.<\/h3>\n<h3>We grew ours in pots and large foam boxes with holes in the bottom for adequate drainage.<\/h3>\n<h3>Position them in a warm suny spot to capture the heat.<\/h3>\n<h3>The trouble with growing your own is that you can end up with such a bumper crop it is hard to use them up before they detriorate.<\/h3>\n<h2><span style=\"color: #008000;\"><em>So&#8230;.here are a couple of ideas to use them up:<\/em><\/span><\/h2>\n<ul>\n<li>\n<h3>make your own pasta sauce by simmering chopped tomatoes until thick with diced onions, fresh basil and\/or oregano, worcestershire sauce, balsamic or lemon juice, generous pinch of sugar and salt<\/h3>\n<\/li>\n<li>\n<h3><span style=\"color: #ff0000;\">make a quick salsa as an accompaniment to barbecued meat or chicken. Dice tomato and toss with diced red onion, green and\/or yellow capsicum, flat leaf parsley, a generous squeeze of lemon juice, salt and black pepper. Add a finely chopped medium red chilli or sweet chilli sauce if you like a bit more bite.<\/span><\/h3>\n<\/li>\n<li>\n<h3>drizzle halved tomatoes with olive oil, salt &amp; pepper and bake in a slow oven<\/h3>\n<\/li>\n<li>\n<h3><span style=\"color: #ff0000;\">make a thick tomato soup<\/span><\/h3>\n<\/li>\n<li>\n<h3><em>Use up those underripe green tomatoes to make this delicious green tomato cake. It is best to use firm green tomatoes before they start to turn red.<\/em><\/h3>\n<\/li>\n<\/ul>\n<h2><span style=\"color: #008000;\"><strong>Green Tomato &amp; Walnut Cake<\/strong><\/span><\/h2>\n<h3>Makes 1 x 20cm round cake<\/h3>\n<h3><span style=\"color: #008000;\"><em><strong>Ingredients<\/strong><\/em><\/span><br \/>\n1 1\/4 cups sugar<br \/>\n125g butter, melted<br \/>\n2 eggs<br \/>\n1 teaspoon vanilla extract<br \/>\n1 1\/2 cups self raising flour<br \/>\n1\/2 teaspoon salt<br \/>\n1\/2 teaspoon baking powder<br \/>\n1 teaspoon cinnamon<br \/>\n1\/4 teaspoon nutmeg (optional)<br \/>\n1\/2 cup chopped walnuts or pecans<br \/>\n1\/2 cup sultanas<br \/>\n1 1\/2 cups diced green tomatoes<\/h3>\n<h3><span style=\"color: #008000;\"><em><strong>Method<\/strong><\/em><\/span><br \/>\n<span style=\"color: #008000;\">Preheat oven to 180\u00baC. Combine sugar, melted butter, eggs and vanilla in a medium bowl and beat until smooth and creamy. In a separate bowl sift flour, salt, cinnamon and nutmeg. Gradually beat the sugar mixture into the flour and mix until well combined. Stir in walnuts, sultanas and tomatoes. Pour into a greased or baking paper lined 20cm round cake tin. Bake in a moderate oven (180\u00baC) for one hour, or until skewer inserted in the centre comes out clean.
