{"id":1347,"date":"2022-04-06T10:05:28","date_gmt":"2022-04-06T00:05:28","guid":{"rendered":"https:\/\/brigidtreloar.com.au\/blog\/?p=1347"},"modified":"2022-04-06T10:07:12","modified_gmt":"2022-04-06T00:07:12","slug":"polenta-pumpkin-chips","status":"publish","type":"post","link":"https:\/\/brigidtreloar.com.au\/blog\/2022\/04\/06\/polenta-pumpkin-chips\/","title":{"rendered":"Polenta Pumpkin Chips"},"content":{"rendered":"<p id=\"top\" \/>\n<p><a href=\"https:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2022\/04\/Polenta-Chips-scaled.jpg\"><img decoding=\"async\" class=\"alignnone size-medium wp-image-1349\" src=\"https:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2022\/04\/Polenta-Chips-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2022\/04\/Polenta-Chips-225x300.jpg 225w, https:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2022\/04\/Polenta-Chips-768x1024.jpg 768w, https:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2022\/04\/Polenta-Chips-scaled.jpg 1920w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p>\u00a0<\/p>\n<p>A fantastic recipe when you have left over pumpkin!<\/p>\n<p>\u00a0<\/p>\n<p><span style=\"text-decoration: underline; color: #800080;\"><strong>Ingredients &#8211; Polenta Chips<\/strong><\/span><\/p>\n<ul style=\"list-style-type: circle;\">\n<li>Olive oil or vegetable oil, for brushing and deep-frying<\/li>\n<li>750ml (3 cups) vegetable stock<\/li>\n<li>250g (2 cups) coarsely grated pumpkin (or winter squash)<\/li>\n<li>250g (1 2\/3 cups) polenta<\/li>\n<li>30g unsalted butter, chopped<\/li>\n<li>35g (1\/3 cup) finely grated parmesan cheese<\/li>\n<li>1 tablespoon finely chopped flat-leaf parsley<\/li>\n<li>1 teaspoon finely chopped<span style=\"color: #000000;\"> rosemary<\/span><\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline; color: #800080;\"><strong>Ingredients &#8211; Herb Mayonnaise<\/strong><\/span><\/p>\n<ul style=\"list-style-type: circle;\">\n<li>2 egg yolks<\/li>\n<li>1 teaspoon dijon mustard<\/li>\n<li>200ml olive oil<\/li>\n<li>1 tablespoon lemon juice<\/li>\n<li>1 handful flat leaf parsley, finely chopped<\/li>\n<li>1 small handful basil leaves, chopped<\/li>\n<\/ul>\n<p>\u00a0<\/p>\n<p><span style=\"text-decoration: underline; color: #800080;\"><strong>Method<\/strong><\/span><\/p>\n<ol>\n<li>To make the herb mayonnaise, place the egg yolks and mustard in a small food processor and blend until combined.<\/li>\n<li>With the motor running, very slowly drizzle in one-third of the olive oil until well combined, then add the remaining oil in a thin steady stream until all the oil has been added and the mayonnaise is a thick consistency.<\/li>\n<li>Add the lemon juice and herbs and blend until well combined. Season to taste with sea salt and set aside until required.<\/li>\n<li>Brush a 30cm x 20cm (12 x 18 inch) baking dish generously with oil<\/li>\n<li>Bring the stock to the boil in a large saucepan over high heat.<\/li>\n<li>Stir in the grated pumpkin and reduce heat to medium low.<\/li>\n<li>Gradually add the polenta in a thin steady stream, whisking constantly until smooth.\u00a0<\/li>\n<li>Cook, stirring constantly, for 15 minutes, or until the polenta is very thick and pulls away from the side of the pan.<\/li>\n<li>Remove from the heat and stir in the butter, parmesan and herbs. Season to taste.<\/li>\n<li>Pour the polenta mixture into the baking dish, spreading it evenly.\u00a0<\/li>\n<li>Leave to cool, then refrigerate for 1-2 hours, or until completely chilled and firm.<\/li>\n<li>Turn the polenta out onto a cutting board.
