This recipe may not be quite the gastronomic equal of some of these award winners but it&#8217;s tasty and so so easy, it might be worth giving it a go.\u00a0 A great way to get kids involved, making their own big ones for a quick and easy meal or small ones for parties, snacks and school lunchboxes.<\/h3>\n<h3><span style=\"color: #008000;\">Alternatively, make savoury tartlets by omitting the pie &#8216;lids&#8217; (instructions for the more rustic finish are at the end of the pie recipe below).<\/span><\/h3>\n<div id=\"attachment_507\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" aria-describedby=\"caption-attachment-507\" class=\"size-medium wp-image-507\" title=\"Cooked savoury tartlets\" src=\"http:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2009\/10\/PB080028-300x225.jpg\" alt=\"Cooked savoury tartlets with added chorizo sausage\" width=\"300\" height=\"225\" srcset=\"https:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2009\/10\/PB080028-300x225.jpg 300w, https:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2009\/10\/PB080028-1024x768.jpg 1024w, https:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2009\/10\/PB080028.JPG 800w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-507\" class=\"wp-caption-text\">Cooked savoury tartlets with added chorizo sausage<\/p><\/div>\n<h2><span style=\"color: #008000;\"><span style=\"color: #ff6600;\">Easy Chicken &amp; Corn Muffin Pies<\/span><br \/>\n<\/span><\/h2>\n<h3>Makes 12<\/h3>\n<h3><span style=\"color: #0000ff;\">Ingredients<\/span><\/h3>\n<h3>1 cooked BBQ chicken, shredded<\/h3>\n<h3>2 cups mixed vegetables (eg. diced red capsicum, celery, green shallots, corn, peas)<\/h3>\n<h3>400g can creamed corn<\/h3>\n<h3>2 teaspoons dried mixed herbs (optional)<\/h3>\n<h3>4 sheets puff pastry<\/h3>\n<h3>1 small egg, lightly beaten mixed with 1 tablespoon milk<\/h3>\n<h3>1-2 tablespoons sesame seeds<\/h3>\n<h3><span style=\"color: #ff0000;\">Method<\/span><\/h3>\n<ul>\n<li>\n<h3>Combine cooled chicken, vegetables, corn and herbs.<\/h3>\n<\/li>\n<li>\n<h3>Using a pastry cutter or trace around a saucer with a sharp knife to cut pastry rounds. Gently push into lightly greased muffin tins.<\/h3>\n<\/li>\n<li>\n<h3>Spoon chicken mixture into pastry. Cut pastry lids, place on pies and gently press edges together to seal.<\/h3>\n<\/li>\n<li>\n<h3>Make 2 small slits in pastry lids, brush with egg mix and sprinkle with sesame seeds.<\/h3>\n<\/li>\n<li>\n<h3>Bake in hot oven (200\u00b0 &#8211; 210\u00b0C) for 15-20 minutes or until golden.<\/h3>\n<\/li>\n<li>\n<h3>Serve hot or cold.<\/h3>\n<\/li>\n<\/ul>\n<h3><em><span style=\"color: #0000ff;\">T<\/span><span style=\"color: #0000ff;\"><span style=\"color: #0000ff;\">ips: <\/span><\/span><\/em><\/h3>\n<ul>\n<li><em><span style=\"color: #0000ff;\"> <strong>Substitute beef, lamb, seafood, choriz or tofu for chicken or use any combination of other vegetables. <\/strong><\/span> <\/em><\/li>\n<li><strong><em><span style=\"color: #0000ff;\">Pies can be frozen for up to 3 months.<\/span><\/em> <\/strong><\/li>\n<li><span style=\"color: #0000ff;\"><strong><em>The same mixture could be used to make tartlets (see recipe below). <\/em><\/strong><\/span><\/li>\n<\/ul>\n<h2><span style=\"color: #ff0000;\">SAVOURY MUFFIN TARTLETS<\/span><\/h2>\n<h3><span style=\"color: #008000;\"><strong><em><strong><em>C<\/em><\/strong>ut each puff pastry sheet into 4 squares. Push each square<\/em> <em>gently into muffin tin holes with any excess pastry left above the hole for a more rustic look.
