Not a problem with this really simple bread made with lots of different ingredients. Don&#8217;t panic if you&#8217;re missing some of the ingredients, simply substitute with whatever you have. Every time I make this recipe I add different ingredients, so feel free to experiment. Great for work or school lunches.<\/h3>\n<div id=\"attachment_499\" style=\"width: 310px\" class=\"wp-caption alignleft\"><img decoding=\"async\" aria-describedby=\"caption-attachment-499\" class=\"size-medium wp-image-499\" title=\"PB080026\" src=\"http:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2009\/11\/PB080026-300x225.jpg\" alt=\"Cooked country loaf - with spinach, feta, tomatoes &amp; herbs\" width=\"300\" height=\"225\" srcset=\"https:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2009\/11\/PB080026-300x225.jpg 300w, https:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2009\/11\/PB080026-1024x768.jpg 1024w, https:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2009\/11\/PB080026.JPG 800w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-499\" class=\"wp-caption-text\">Cooked country loaf &#8211; with spinach, feta, tomatoes &amp; herbs<\/p><\/div>\n<h1><span style=\"color: #ff0000;\">Country Loaf<\/span><\/h1>\n<h3>Makes 2 loaves<\/h3>\n<h2><span style=\"color: #0000ff;\">Ingredients <\/span><\/h2>\n<h3>250g blanched or frozen English spinach, defrosted &amp; drained<\/h3>\n<h3>2 cups (300g) self raising flour<\/h3>\n<h3>1 cup diced kumara or pumpkin, cooked &amp; cooled<\/h3>\n<h3>1 cup (80g) freshly grated parmesan cheese<\/h3>\n<h3>3\/4 cup (150g) feta cheese, crumbled<\/h3>\n<h3>1\/2 cup chopped semi-dried tomatoes<\/h3>\n<h3>\u00bd cup corn kernels<\/h3>\n<h3>\u00bd red capsicum, diced<\/h3>\n<h3>4 green shallots, finely sliced<\/h3>\n<h3>3 teaspoons dried mixed herbs<\/h3>\n<h3>Generous pinch salt<\/h3>\n<h3>Cracked black pepper<\/h3>\n<h3>1 cup (250ml) milk<\/h3>\n<h2><span style=\"color: #ff0000;\"><strong>Method<\/strong><\/span><\/h2>\n<ul>\n<li>\n<h3>Drain spinach and squeeze firmly to remove excess moisture or bread will be too soggy. (Tip: wrap spinach in sushi mat and squeeze, it works really well for this job!).<\/h3>\n<\/li>\n<li>\n<h3>Combine spinach, sifted flour, kumara, parmesan, feta, tomatoes, corn, green shallots, herbs, salt and pepper in a large bowl, stirring until well mixed.<\/h3>\n<\/li>\n<li>\n<h3>Gradually stir in enough milk until mixture forms a soft, sticky dough.<\/h3>\n<\/li>\n<li>\n<h3>Turn dough onto a lightly floured surface and gently combine.<\/h3>\n<\/li>\n<li>\n<h3>Shape into two log shapes, about 25cm long.<\/h3>\n<p><div id=\"attachment_498\" style=\"width: 310px\" class=\"wp-caption alignleft\"><img decoding=\"async\" aria-describedby=\"caption-attachment-498\" class=\"size-medium wp-image-498\" title=\"PB080017\" src=\"http:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2009\/11\/PB080017-300x225.jpg\" alt=\"Country loaf - shape mixture into 2 loaves\" width=\"300\" height=\"225\" srcset=\"https:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2009\/11\/PB080017-300x225.jpg 300w, https:\/\/brigidtreloar.com.au\/blog\/wp-content\/uploads\/2009\/11\/PB080017-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-498\" class=\"wp-caption-text\">Country loaf &#8211; shape mixture into 2 loaves<\/p><\/div><\/li>\n<\/ul>\n<h1><span style=\"color: #ff0000;\">\u00a0<\/span><\/h1>\n<ul>\n<li>\n<h3>Place on an oven tray lined with baking paper and cook in a moderately hot oven (200\u00b0C) about 40-50 minutes or until a skewer inserted comes out clean.<\/h3>\n<\/li>\n<li>\n<h3>Remove from oven and cool on a wire rack. Slice thickly to serve.<\/h3>\n<\/li>\n<\/ul>\n<h3><em><span style=\"color: #0000ff;\">Tips:<\/span> <\/em><\/h3>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>\n<h3><span style=\"color: #800080;\"><em>Add other ingredients such as chopped ham, black olives, chick peas, cooked green peas, uncooked diced zuchini or carrots, blanched cauliflower or broccoli florets, chopped fresh basil or thyme, cayenne or chilli.<\/em><\/span><\/h3>\n<\/li>\n<li>\n<h3><span style=\"color: #800080;\"><em>Pan fry diced onion and chopped bacon and allow to cool before adding to the mixture.<br \/>\n<\/em><\/span><\/h3>\n<h3><\/h3>\n<\/li>\n<li>\n<h3><span style=\"color: #800080;\"><em>Substitute grated cheddar or smoked cheese for feta cheese.<br \/>\n<\/em><\/span><\/h3>\n<\/li>\n<li>\n<h3><span style=\"color: #800080;\"><em>Substitute wholemeal self raising flour or simply add 1\/3 cup wheat bran to make the loaf wholemeal.
