{"id":7,"date":"2007-07-08T07:00:54","date_gmt":"2007-07-08T14:00:54","guid":{"rendered":"http:\/\/brigidtreloar.com.au\/blog\/?p=7"},"modified":"2021-02-08T23:08:58","modified_gmt":"2021-02-08T13:08:58","slug":"slow-cookers","status":"publish","type":"post","link":"https:\/\/brigidtreloar.com.au\/blog\/2007\/07\/08\/slow-cookers\/","title":{"rendered":"Slow Cookers"},"content":{"rendered":"<p id=\"top\" \/>\n<h2><span style=\"color: #ff6600;\"><em><strong><span style=\"color: #ff6600;\">On ABCNSW radio\u00a0<\/span><\/strong><\/em><\/span><span style=\"font-size: 12pt;\">(see www.abc.net.au\/newcastle)<\/span><\/h2>\n<h1><span style=\"color: #008000;\"><strong>SLOW COOKERS <\/strong><\/span><\/h1>\n<h2><span style=\"color: #ff6600;\"><em><strong>Why use a slow cooker?<\/strong><\/em><\/span><\/h2>\n<ul>\n<li>\n<h3>comfort food, especially in winter<\/h3>\n<\/li>\n<li>\n<h3>older generations more used to slow cooking than younger but it is changing<\/h3>\n<\/li>\n<li>\n<h3>good for busy people, especially if working<\/h3>\n<\/li>\n<li>\n<h3>convenient (some slow cookers are programmable)<\/h3>\n<\/li>\n<li>\n<h3>cheaper meat cuts so saves money<\/h3>\n<\/li>\n<li>\n<h3>improves nutrition cooking slowly at lower temperature<\/h3>\n<\/li>\n<li>\n<h3>delicious as time for flavours to develop<\/h3>\n<\/li>\n<li>\n<h3>safe<\/h3>\n<\/li>\n<\/ul>\n<h2><span style=\"color: #008000;\"><em><strong>What can be cooked in a slow cooker?<\/strong><\/em><\/span><\/h2>\n<ul>\n<li>\n<h3>probably more than you realise<\/h3>\n<\/li>\n<li>\n<h3>meat, vegetables, soups, casseroles, puddings, fruit, rice puddings<\/h3>\n<\/li>\n<\/ul>\n<h2><span style=\"color: #ff6600;\"><em><strong>Slow cooker tips<\/strong><\/em><\/span><\/h2>\n<ul>\n<li>\n<h3>preheat for 20 mins on low or cook on high for 1st hour<\/h3>\n<\/li>\n<li>\n<h3>don\u2019t cook frozen food<\/h3>\n<\/li>\n<li>\n<h3>do not overfill slow cooker<\/h3>\n<\/li>\n<li>\n<h3>for moist cooking almost cover meat or poultry with liquid for effective heat transfer<\/h3>\n<\/li>\n<li>\n<h3>reduce liquid as little evaporation<\/h3>\n<\/li>\n<li>\n<h3>brown meat before cooking to seal juices, appearance\/flavour<\/h3>\n<\/li>\n<li>\n<h3>if no cake tin available that fits in slow cooker, simply spray removable ceramic bowl of slow cooker and pour cake mix directly into bowl to cook<\/h3>\n<\/li>\n<\/ul>\n<h2><span style=\"color: #008000;\"><em><strong>Recipes<\/strong><\/em><\/span><\/h2>\n<h3>Recipes John and I have talked about in previous years<br \/>\n(already on the ABC NSW website &#8211; (see <strong>www.abc.net.au\/newcastle<\/strong>):<\/h3>\n<ul>\n<li>\n<h3>Slow cooked spinach and roasted pine nut stuffed leg of lamb<\/h3>\n<\/li>\n<\/ul>\n<ul>\n<li>\n<h3>Slow cooker lamb shank and vegetable soup<\/h3>\n<\/li>\n<\/ul>\n<h2><span style=\"color: #ff6600;\"><strong>Honey mustard lamb roast with baby potatoes<\/strong><\/span><\/h2>\n<h3>Serves 4 &#8211; 6<\/h3>\n<h3>8 &#8211; 9 hours on low<\/h3>\n<h3><span style=\"color: #008000;\"><strong>Ingredients<\/strong><\/span><\/h3>\n<h3><span style=\"color: #000000;\">1.8kg leg of lamb, deboned<br \/>\n12 sprigs fresh rosemary<br \/>\n2-3 cloves garlic, thinly sliced<br \/>\nsalt and cracked black pepper<br \/>\n1\/2 cup honey<br \/>\n1 tablespoon wholegrain mustard<br \/>\n1 tablespoon lemon juice<br \/>\n2 teaspoons lemon zest<br \/>\n2 tablespoons butter or oil<br \/>\n12 baby potatoes (chats)<\/span><\/h3>\n<h3><span style=\"color: #008000;\"><strong>Method<\/strong><\/span><\/h3>\n<ul>\n<li>\n<h3><span style=\"color: #000000;\">Trim any excess fat from lamb.<\/span><\/h3>\n<\/li>\n<li>\n<h3><span style=\"color: #000000;\">Make small incisions into lamb using a sharp knife. Press garlic and rosemary into cuts.<\/span><\/h3>\n<\/li>\n<li>\n<h3><span style=\"color: #000000;\">Place lamb in slow cooker and season with salt and pepper.<\/span><\/h3>\n<\/li>\n<li>\n<h3><span style=\"color: #000000;\">Combine honey, mustard, lemon juice, zest and butter in a bowl and pour over lamb.<\/span><\/h3>\n<\/li>\n<li>\n<h3><span style=\"color: #000000;\">Cover and cook on low for 8 \u2013 9 hours.<\/span><\/h3>\n<\/li>\n<li>\n<h3><span style=\"color: #000000;\">Add baby potatoes for the last hour of cooking.<\/span><\/h3>\n<\/li>\n<\/ul>\n<p><span style=\"color: #008000;\"><em>Notes: (1 Australian tablespoon = 4 teaspoons\/20mls)<\/em><\/span><\/p>\n<ul>\n<li><span style=\"color: #008000;\"><em>Before cooking, brown lamb in frypan until golden for added flavour.<\/em><\/span><\/li>\n<li><span style=\"color: #008000;\"><em>Lamb could also be stuffed then tied with string to hold together &#8211; combine blanched English spinach or rocket and toasted pine nuts. Spread over lamb, roll meat from one side to the other and tie securely with cooking twine.<\/em><\/span><\/li>\n<li><span style=\"color: #008000;\"><em>Cook liquid left in slow cooker on high until reduced and thicker or combine 1 tablespoon cornflour with 2 tablespoons water.
