{"id":766,"date":"2010-04-26T23:43:14","date_gmt":"2010-04-26T13:43:14","guid":{"rendered":"http:\/\/brigidtreloar.com.au\/blog\/?p=766"},"modified":"2010-10-11T16:22:36","modified_gmt":"2010-10-11T06:22:36","slug":"corned-beef-with-white-sauce","status":"publish","type":"post","link":"https:\/\/brigidtreloar.com.au\/blog\/2010\/04\/26\/corned-beef-with-white-sauce\/","title":{"rendered":"Corned beef with white sauce &#8211; an oldie but a goodie"},"content":{"rendered":"<p id=\"top\" \/><span style=\"font-size: x-large;\"><span style=\"color: #0000ff;\"><strong>ABC NSW radio 1233 with Carol Duncan <\/strong><\/span>on Monday 26 April 2010<\/span><\/p>\n<p><span style=\"font-size: medium;\"><span style=\"color: #800080;\"><strong>Preparation Time<\/strong><\/span> 10 minutes<\/span><\/p>\n<p><span style=\"font-size: medium;\"><span style=\"color: #0000ff;\"><strong>Cooking Time 1<\/strong><\/span> 1\/2 \u2013 2 hours<\/span><\/p>\n<p><span style=\"font-size: medium;\"> <\/span><\/p>\n<p><span style=\"font-size: medium;\"><span style=\"color: #800080;\"><strong>Ingredients<\/strong><\/span> (serves 6)<\/span><\/p>\n<p><span style=\"font-size: medium;\">1.5 kg beef corned silverside<\/span><\/p>\n<p><span style=\"font-size: medium;\">1 onion, halved<\/span><\/p>\n<p><span style=\"font-size: medium;\">2 tablespoons malt vinegar<\/span><\/p>\n<p><span style=\"font-size: medium;\">1 1\/2 tablespoons brown sugar<\/span><\/p>\n<p><span style=\"font-size: medium;\">2 bay leaves<\/span><\/p>\n<p><span style=\"font-size: medium;\">1 teaspoon black peppercorns<\/span><\/p>\n<p><span style=\"font-size: medium;\">4 whole cloves<\/span><\/p>\n<p><span style=\"font-size: medium;\">1 strip lemon rind<\/span><\/p>\n<p><span style=\"font-size: medium;\"> <\/span><\/p>\n<p><strong><span style=\"color: #0000ff;\"><span style=\"font-size: medium;\">For white sauce<\/span><\/span><\/strong><\/p>\n<p><span style=\"font-size: medium;\">2 tablespoons butter<\/span><\/p>\n<p><span style=\"font-size: medium;\">1 small onion, finely chopped<\/span><\/p>\n<p><span style=\"font-size: medium;\">1 \u00bd tablespoons plain flour<\/span><\/p>\n<p><span style=\"font-size: medium;\">2 cups milk<\/span><\/p>\n<p><span style=\"font-size: medium;\">\u00bc cup cooking broth from the corned silverside<\/span><\/p>\n<p><span style=\"font-size: medium;\">A generous pinch nutmeg &amp; ground cloves<\/span><\/p>\n<p><span style=\"font-size: medium;\">Cracked black pepper<\/span><\/p>\n<p><span style=\"font-size: medium;\"> <\/span><\/p>\n<p><span style=\"color: #800080;\"><strong><span style=\"font-size: medium;\">Method<\/span><\/strong><\/span><\/p>\n<ul>\n<li><span style=\"font-size: medium;\">Place beef in a large saucepan of cold water. Bring to boil. Simmer for 5 minutes (this step will minimise the saltiness). Drain the beef.<\/span><\/li>\n<li><span style=\"font-size: medium;\">Refill saucepan with cold water. Add beef, onion, vinegar, sugar, bay leaves, peppercorns, cloves and lemon rind. Bring to boil. Reduce to a simmer. Cook for 1 1\/2 hours or until tender. Remove beef from saucepan. Set aside, covered with foil, for 10 minutes to rest before slicing.<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"font-size: medium;\"> <\/span><span style=\"font-size: medium;\">To make the white sauce, melt the butter over medium heat, then add the onion and cook 10 minutes or until soft.<\/span><\/li>\n<li><span style=\"font-size: medium;\">Sprinkle the flour over the onion and cook, stirring, for 1 minute.<\/span><\/li>\n<li><span style=\"font-size: medium;\">Remove the pan from the heat and slowly whisk in milk and cooking broth.<\/span><\/li>\n<li><span style=\"font-size: medium;\">Return the heat and gradually bring to the boil, stirring until thick.<\/span><\/li>\n<li><span style=\"font-size: medium;\">Season with the nutmeg, cloves and pepper.<\/span><\/li>\n<\/ul>\n<p><span style=\"font-size: medium;\"> <\/span><\/p>\n<p><em><span style=\"font-size: medium;\"><strong><span style=\"color: #0000ff;\">Notes:<\/span><\/strong> Before cooking push the cloves into the onion.\u00a0 Carrots, brussel sprouts or small cabbage cut in quarters could be added to the meat for the last 10-15 minutes of cooking.<\/span><\/em><\/p>\n<p><em><span style=\"font-size: medium;\">Corned beef can also be cooked in a slow cooker, covered, on low for 10-12 hours or high for 6-7 hours.<\/span><\/em><\/p>\n<p><em><span style=\"font-size: medium;\">The onion could be omitted from the sauce.
