Green Tomatoes

Growing your own tomatoes is very easy.
We grew ours in pots and large foam boxes with holes in the bottom for adequate drainage.
Position them in a warm suny spot to capture the heat.
The trouble with growing your own is that you can end up with such a bumper crop it is hard to use them up before they detriorate.
So….here are a couple of ideas to use them up:

make your own pasta sauce by simmering chopped tomatoes until thick with diced onions, fresh basil and/or oregano, worcestershire sauce, balsamic or lemon juice, generous pinch of sugar and salt

make a quick salsa as an accompaniment to barbecued meat or chicken. Dice tomato and toss with diced red onion, green and/or yellow capsicum, flat leaf parsley, a generous squeeze of lemon juice, salt and black pepper. Add a finely chopped medium red chilli or sweet chilli sauce if you like a bit more bite.

drizzle halved tomatoes with olive oil, salt & pepper and bake in a slow oven

make a thick tomato soup

Use up those underripe green tomatoes to make this delicious green tomato cake. It is best to use firm green tomatoes before they start to turn red.
Green Tomato & Walnut Cake
Makes 1 x 20cm round cake
Ingredients
1 1/4 cups sugar
125g butter, melted
2 eggs
1 teaspoon vanilla extract
1 1/2 cups self raising flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg (optional)
1/2 cup chopped walnuts or pecans
1/2 cup sultanas
1 1/2 cups diced green tomatoes
Method
Preheat oven to 180ºC. Combine sugar, melted butter, eggs and vanilla in a medium bowl and beat until smooth and creamy. In a separate bowl sift flour, salt, cinnamon and nutmeg. Gradually beat the sugar mixture into the flour and mix until well combined. Stir in walnuts, sultanas and tomatoes. Pour into a greased or baking paper lined 20cm round cake tin. Bake in a moderate oven (180ºC) for one hour, or until skewer inserted in the centre comes out clean. Remove cake from pan to a cake rack and leave to cool.
