Growing your own tomatoes is very easy.

We grew ours in pots and large foam boxes with holes in the bottom for adequate drainage.

Position them in a warm suny spot to capture the heat.

The trouble with growing your own is that you can end up with such a bumper crop it is hard to use them up before they detriorate.

So….here are a couple of ideas to use them up:

  • make your own pasta sauce by simmering chopped tomatoes until thick with diced onions, fresh basil and/or oregano, worcestershire sauce, balsamic or lemon juice, generous pinch of sugar and salt

  • make a quick salsa as an accompaniment to barbecued meat or chicken. Dice tomato and toss with diced red onion, green and/or yellow capsicum, flat leaf parsley, a generous squeeze of lemon juice, salt and black pepper. Add a finely chopped medium red chilli or sweet chilli sauce if you like a bit more bite.

  • drizzle halved tomatoes with olive oil, salt & pepper and bake in a slow oven

  • make a thick tomato soup

  • Use up those underripe green tomatoes to make this delicious green tomato cake. It is best to use firm green tomatoes before they start to turn red.
