No bread making machine? Not a problem with this really simple bread made with lots of different ingredients. Don’t panic if you’re missing some of the ingredients, simply substitute with whatever you have. Every time I make this recipe I add different ingredients, so feel free to experiment. Great for school lunches, too.

Country Loaf

Makes 2 loaves

Ingredients

250g blanched or frozen English spinach, defrosted & drained

2 cups (300g) self raising flour

1 cup diced kumara or pumpkin, cooked & cooled

1 cup (80g) freshly grated parmesan cheese

3/4 cup (150g) feta cheese, crumbled

1/2 cup chopped semi-dried tomatoes

½ cup corn kernels

½ red capsicum, diced

4 green shallots, finely sliced

3 teaspoons dried mixed herbs

Generous pinch salt

Cracked black pepper

1 cup (250ml) milk

Method

  • Drain spinach and squeeze firmly to remove excess moisture or bread will be too soggy. (Tip: wrap spinach in sushi mat and squeeze, it works really well for this job!).

  • Combine spinach, sifted flour, kumara, parmesan, feta, tomatoes, corn, green shallots, herbs, salt and pepper in a large bowl, stirring until well mixed.

  • Gradually stir in enough milk until mixture forms a soft, sticky dough.

  • Turn dough onto a lightly floured surface and gently combine.

  • Shape into two log shapes, about 25cm long.

  • Place on an oven tray lined with baking paper and cook in a moderately hot oven (200°C) about 40-50 minutes or until a skewer inserted comes out clean.

  • Remove from oven and cool on a wire rack. Slice thickly to serve.

Tips:

  • Add other ingredients such as chopped ham, black olives, chick peas, cooked green peas, uncooked diced zuchini or carrots, blanched cauliflower or broccoli florets, chopped fresh basil or thyme, cayenne or chilli.

  • Pan fry diced onion and chopped bacon and allow to cool before adding to the mixture.

  • Substitute grated cheddar or smoked cheese for feta cheese.

  • Substitute wholemeal self raising flour or simply add 1/3 cup wheat bran to make the loaf wholemeal. It may not rise as much and will have a denser texture, or you could use half wholemeal self raising flour, half self raising flour.

  • Toast left over bread and top with tomatoes or serve with soup.
