Anzac Biscuits
Anzac day is just around the corner and what better way to remember our soldiers than to bake the famous Anzac biscuits. Originally sent by wives of servicemen as the ingredients didn’t spoil easily in transportation, making them a delicious treat to remind our soldiers of home. This is a classic recipe from my very old and well used copy of The Australian Women’s Weekly ‘101 Delicious Biscuits and Slices’.
I make small biscuits and flatten them to make them crunchier, but some like them larger and chewier, so maybe try both versions!
Makes approx 3 dozen small biscuits
Ingredients
- 1 cup rolled oats
- 1 cup plain flour, sifted
- 1 cup sugar
- 3/4 cup coconut
- 125g butter
- 1 tablespoon golden syrup
- 1 1/2 teaspoons bicarbonate of soda
- 2 tablespoons boiling water
Method
- Combine rolled oats, sifted flour, sugar and coconut.
- Combine butter and golden syrup in a small saucepan, stir over gentle heat until melted.
- Mix bicarb soda with boiling water, add to melted butter mixture, then stir into dry ingredients.
- Spoon small spoonfuls of mixture onto greased or paper lined oven trays and flatten gently with a fork (allow room for biscuits to spread).
- Bake in slow oven on 160 degrees C (145 degrees C for fan forced) for 10-12 minutes.
- Loosen biscuits on trays while warm, then let cool on trays.
- Once cool, store in an airtight container.
